are bantams even worth butchering?

i think butchering a banty is what is known as 'chicken on a stick'!!!

All birds commercially raised, even the "game hens" are just cornish x's. Instead of butchering at 6 weeks or so, they butcher them at 4 weeks instead. I'm sure they get graded some how with the largest going to restaurants, then the stores, then things like chicken parts, ground chicken, and then pet food.
 
I was thinking about doing this with extra banties. I eat quail and they are tiny things the banties are bigger than them so I would think they would be beefer than the quail regardless.
