Are fresh eggs really better?

My little brother is doing a experiment on fresh, organic, homemade foods vs. store bought processed food. That I means I get to peel 6 eggs that I hardboiled after they were laid today. Wish me luck?
 
He's doing 2 sets of deviled eggs. One will be completely processed and store bought, the other set will be organic, homemade ingredients, so homemade mustard, pickles, mayonnaise, and eggs from my hens. Then he has 24 people tasting one of each egg blindfolded and guessing which one is organic and which is store brought ingredients.

depending on how the deviling is done it can mask some of the egg
flavor it might be truer to just half the egg offering water between
almost like a wine tasting jmho
 
The point is all organic vs. store bought ingredients, not just eggs. This is his project, I'm just assisting him in making the food.
 
His science fair was Thursday. He didn't win anything, but it was still good. The organic eggs only won by 4 votes!
