i call these serama hens chocolate. not sure if it's dun or not, or they may be too dark to call chocolate

They look chocolate coloured to me.

Black is the colour least likely to add patterns or unwanted colouring to the birds; it is as close to neutral as there is.

Can a bird with that only has a few chocolate feathers on it be carriers of chocolate?

If I breed a chocolate hen to a cock and their daughters come out not a solid chocolate but with only a few chocolate-colored feathers. Could you say that they are dun?
And if daughters from this pairing do not posses not one chocolate colored feather ,could you say that they are rec. choc?

Ooo, this gives me an idea for the future. I love Delawares; I wonder what would happen if you had a Chocolate Splashed Delaware (Developed over time of course) Or maybe a Delaware with Chocolate barring instead of black? Lol. I like the chocolate Orp idea too!
