This is true. However, as a new chicken owner who didn't know this, I found it irritating.
 
As earlier stated chickens with white ear lobes lay white eggs and chickens with red ear lobes lay brown eggs. Leghorns originated in the Mediterranean, are leaner and more agile than white Plymouth Rocks , which are American dual purpose birds. A mature leghorn will have her comb fold over and the legs, beak and comb will lighten as she lays more and more eggs.
