Are thick egg yolks healthy?

My olive egger chicks just started laying one last month one this week. The eggs and especially the yolks are still tiny so I use them when lessening a portion of waffle batter and for feeding my small cat. The yolk has a hard time breaking up when trying to mix it with milk and then when I crush the yolk on a plate for my cat it seems to hold its shape for a moment after squishing it with the fork. Is it just smaller yolk still with the nutrients of a big yolk or something?
 
I consider those higher quality eggs. I don't like it when the yolk breaks too easily, or the yolk separates from the white. To me, those are best eggs.

As a bird ages often times the whites will get thin, and yolks weak. I like having a mixed flock, as I can recognize the color of my older birds and use them in baking, keeping the better eggs for poaching or frying.
