Got 15 eggs today! That's the most if ever gotten!! Such a pretty array of colors.

Well, here is what it looks like right out of the oven. I used 2 dozen eggs, 1 27 oz can of whole Hatch chilis, and about a pound of shredded sharp cheddar, along with 1 cup of hot Sadie's salsa.....

Ours was great too! Now have to remember to stop at Costco to get Hatch chilis - cheapest price in town for two cans. We had enough left to send to the neighbors who are now converts!!

Yum! Your recipe came just in time the other day. I had a couple dozen extra eggs and most of the ingredients, and I needed something for a potluck. I used roasted chilis from Food City and stuffed the chilis with Oaxacan queso. Should have cooked it a few minutes longer than I did, so the middle was a little soft. The edge pieces were amazing. Need to track down some Hatch chilis. Have another potluck coming up in a few days.

We ate leftovers for breakfast!  So I think yes.  You could add bacon bits or some such thing. 


Yes, I did the same thing. Pulled it out of the oven and started cutting it and found the center still liquidy, so just popped it back in the oven for 10 minutes.
And yes, this is good any time! Breakfast, lunch, dinner, or a quick snack.
Here is another hint...I often make this same recipe in large muffin tin. Grease up the tin, fill about 1/4 full with egg mixture, then cook for 5 minutes, pull it out and top with whatever you like, then top with more egg and finish cooking. These keep great in the fridge, pull one out and nuke it. Great anytime snack.
