I recd a Target gift card today and couldn't figure out what I wanted to get with it.  After all the talk of home made mayo on here, I'm gonna get an immersion blender!!! Can't wait to try it out.  P.S. those farm pix are making me so envious.  Have started with a few chickens and now adding rabbits.  Should have our first litter in a few days.  Can't wait to get out of the city and onto some property where I can add a couple of goats, etc.  My east coast family thinks I've gone mad.  :gig

I have never tried making mayo. Sounds easy enough that even I won't mess it up.

So...I have worked 8 years turning my side yard into a garden paradise. It is really lovely out there. I will now be turning it over to my dogs while I get the rest of my backyard to work on! I'm a bit devastated as the dogs will take maybe a week to destroy what I've worked so hard on, but heck, I get 5-6x the space to garden in and beautify now! I'll have a bigger garden, and the rest will be a mix of native plants and such. I can't wait. I've not been able to do much with the main backyard--my dogs are crazy plant and landscape destruction machines. I should have made the trade YEARS ago.

That's my plan. Immersion blender purchased today and will be looking up your mayo recipe to surprise DH with another healthier home made item. So far have successfully done soap and laundry detergent. My rich sister in law was here to visit recently and said she was inspired. She now has several friends asking her for the home made stuff she is making (she lives on the east coast). She tells them the first sample is free - she's so funny. My brother wants chickens but she won't go that far yet.
 
That's sad. She doesn't know what she's missing.

Here's one of our favorite mayo recipes. It's made with a food processor instead of an immersion blender, but I don't see why you couldn't use your new toy to make it. The key really is to add the oil super slowly for proper emulsification. Otherwise the mayo stays too runny. It usually takes me about 2 minutes to add the oil to get the right consistency.

Homemade Mayo
Taken from Satisfying Eats Cookbook
Makes a little over 2 cups
Entire batch <1 Net Carb


2 whole pastured eggs
1 tbsp apple cider vinegar
3/4 tsp salt
2 tsp prepared mustard
2 cups light olive oil (not a vegetable blend)


Directions
Blend eggs, vinegar, salt, and mustard in food processor. While machine is running, slowly add oil, VERY SLOWLY!! Continue until all of the oil has been added and the eggs and oil have formed an emulsion or Mayonnaise. Taste for salt.
Store in refrigerator for up to 2 weeks.
 
You're very welcome. The great thing about making your own mayo is that you can also create wonderful aiolis for fish, chicken and sandwiches. I add capers, lemon juice and roasted garlic to my mayo to put on baked white fish instead of tarter sauce. It's absolutely delicious!
 
Who else on here has duck's? I just found Lauren out of the front yard, eating the wood ash from our fire pit. I noticed one of their poo's was dark purple, black. We had been giving them purple grapes as a treat.. But now I know why it is coming out the other end black.. I can't be to worried. No signs of illness.. But if anyone has any information let us know. I plan on posting on the duck Fourm as well..
My ducks like to eat the ashes out of the firepit thing we have in the yard too. My ducks have gross poops all the time. I think I am going to give them some pro-biotics. sometimes they have solid but a lot they are messy.
