I don't live in Arizona, but I've wintered many years in the LTVA at Quartzsite in my RV. Bought a house in Washington so I could have chickens.
We love to make and eat kimchi as well. We don't like it with too much heat, but lots of ginger and flavor. Our favorite dish is with grilled chicken and jasmine rice. We do make extra rice for the flock.
I want to make kimchi. Bought it before and liked it. Is it easy to make?

Buster decided to hold down the coolest place in the living room today, in front of the fan and laying right on top of the air-condition vent. That vent wasn't go anywhere without him. :gig

Hahahahaha He didn't want all that cool air being wasted on the rest of the house ! He needed it for his little body. If he could have he would have taken it outside with him when he went to go potty!

Yes, you do have to soak the nappa cabbage for a bit in salt but after that you cut and combine. Get some glass weights and a ponder. Look up fermentation items.
