I put them in the water bath when I'm just starting the water boiling, before filling the jars. If I'm pressure canning, I put the jars in the oven and put the oven on 225 for half an hour. Was the applesauce boiling when you filled the jars?
Did you pressure can or boiling water bath it? For those old jars, I'd probably boiling water bath it, just to be on the safe side, since you can do either with applesauce.
Speaking of canning, I'm going to try this for the first time. I want to make the pomegranate jelly from the recipe TT! posted a while ago. I'm planning on the water bath method, I don't own a pressure canner. Sooooo....can I place the jars directly in the pot or do I have to have that basket thingy to place them in so they dont sit directly on the bottom?
The jars should be lifted slightly. If you don't have the jar basket you could use some canning rings placed on the bottom of the pan or a small round rack from a rice cooker (like a cookie cooling rack). I love http://www.pickyourown.org/allaboutcanning.htm for lots of great canning info.
