Asia dominates in Egg Consumption

When I was living in Thailand, we ate LOTS of eggs. Basically, any noodle or rice dish had eggs in it and on top of it. Every breakfast was eggs (and some lunches and dinners). The eggs were mostly duck eggs, but almost all the salads were served with quail eggs (even the ones from Pizza Hut). I miss the food and having someone to cook for me every day!

I LOVE duck eggs. I got ducks because I can get hives from chicken eggs. I didn't realize how HUGE duck eggs were or how rich the yolks were until my girls started laying. I am hooked.
 
A co-worker of mine (originally from Hawaii) raises ducks for eggs and our local farmer's market has duck eggs for sale. Maybe they will become more popular.

I WONDER what would be the difference in eggs ... such that chicken eggs would give you hives.....yet duck eggs do not.
Did you ever learn what was the determining factor in this?

Not meaning to hijack the post, but do duck eggs and quail eggs taste different from chicken eggs? I've never had them, but I can buy them at the poultry store near here.

I am also one of those people who eats every bit from the chicken leg...love the skin, too, and I make a really tasty chicken soup or turkey soup. Just recently tried making chicken foot soup, wow, the broth was the best tasting I have ever had.
Then my sister is the type who won't eat brown eggs or anything that looks like animal...it must be wrapped up on a plastic tray, disguised and no skin, no bone, etc...sorry she is missing out...

Duck, quail, goose, chicken eggs ALL have their own unique taste and I love all of them. Duck and goose eggs have a stronger flavor...I can't describe it - it's just very different and very yummy! Try some!!
