Later bought Feta and made proper Greek salad to go with spaghetti. :yesss:

Mar 11, Rick came home with a craving...for fish and chips...I thought, way too much grease for me....so I had chips but also Perogies with sour cream. :p
Frozen cod defrosting, potatoes peeled for Rick to make into chips,
Bacon and onions to be fried with perogies and batter for fish
Batter for fish and shrimp, easy! :cool: 1 cup of flour 1/2 cup starch (corn or tapioca) 1 tsp salt 1 tsp sugar 1 tsp baking powder 1/2 tsp baking soda few drops yellow food colouring (optional but looks nicer) 1 to 1.25 cups cold water Stir dry ingredients to mix, add cold water, stir up...should be consistency of pancake batter. Coat fish or shrimp and deep fry in oil and drain. Keep warm in oven till all the rest of your foody items are ready to serve. :D
I cheat...frozen store bought Perogies, boil water, pop them in to cook, when floating to top, done so drain them...
Diced bacon and onions, fry a bit to get oil going,
add boiled perogies and watch they get turned so they don't stick or burn to pan :mad:
Cubed cod and batter -- If I had more warning, would have thawed the cod more...

Grilled roosters in a WONDERFUL SPRING MARINADE!
For the marinade:
Thyme, sage, rosemary, oregano, basilico all fresh from my garden
Limon juice from my garden
A FRESH WONDERFUL SPRING GARLIC
E.V OLIVE OIL
AND calamata olives
Green chili
Salt, pepper.
All processed with a stick processor and pored on the rooster.
Don't forget to tie them and put half of YELLOW lemon and a branch of rosaries in the body cavity.

Today is a big holiday and that what we had for ouer feast meal!
It wa fabulous!
A 5 kg turkey and a 2.5kg lamb shoulder marinated to perfection entered to my smoker, pecan and hickory flacks for the smoke it was exquisite!

Benny as  usual I am stunned at the amount of food you fix....  I can only assume this is a big family get together...

Yes indeed, today we were only 12, I LOVE this gardening! I love my extended family very much and I always ready to host them, I am used to prepare food(good food if I may say :lol:) for 30 or more persons, no problem at all! :lol:)
The turkey was marinated over night in olive oil, Lemmon fresh from my tree, paprika, hot chilli flakes, turmeric, caraway black pepper salt rosemary and sage from my herb garden.
But the difference is in the cooking method, this home made smoker is a marvelous! deb I wish you could taste the lemb and the turkey they was do tasty and moist, nothing except the skeleton and some scraps remain! with the help of 4 bottles of wine! :lol:
