hello chefs got a question for you.

anyone ever cook bear meat before? i shot a black bear and got some back straps/tenderloins to cook up. now its good meat tasted some and tastes like beef? its weird, has like no game taste what so ever.
 
I've not cooked or eaten bear but my understanding is that they are a good source of Trichinosis. You REALLY don't want that so you have to make sure it is cooked thoroughly.
yes they are very bad for that, my government says cook it to 165F but i cook it to about 170-175f just to make sure, i like mine well done :)

I, because my religion can't eat bears, but if I understand it is dark and have a very distinct taste. So my recommendation are:
1. Make some nice hamburgers from it.( meat and some bear fat with some salt herbs and onions and a splash of real maple syrup in it!)
2. A very slow cook dish, stew with some root vegetables and potatoes.
 
anyone here got a good recipe or tips on cooking domestic duck?

picked up a frozen duck at the store today. now i like duck (wild or tame) but i would like something more then just a roast duck in the oven. thinking of breaking it in half and smoking half and maybe using the prime cuts of the other half and make stock out of the bones?

I suffer from severe seasickness, so being on a boat is a nightmare for me, I do dive, free diving and also scuba diving, and do spear fishing . I have some freinds that go deep sea fishing on boats and in time to time I buy from them some nice fish.
