It is a Persian dried lime, I don't know how they do it, but you can find it in a yellow variety black variety and it used in many Persian dishs, they a very sower lemony taste that is wonderful in those dishes.
The most known is a dish called "khoresht Sabzi "

I believe I have had this just recently or a variation of it at the new Persian restaurant that opened here.... It is devine..... and the preserved lime....

Yes it it the same dish! Lots of herbs, good bif, this lemmons and a lot of spices, and of course rice!

Yes it it the same dish! Lots of herbs, good bif, this lemmons and a lot of spices, and of course rice!

took me a minute, but I could see it. I bet it's got a great depth of flavor.

Yes indeed, you can't belive how a lemon can taste.
 
I've been thinking about a solar dehydrator alot lately. This is one more reason to put one up.
They seem relatively easy to make.
Boil in salt water 5 mins
Rinse with warm water
Set in sun for atleast a week
Or 100° oven for 45 hours
