It was my bday yesterday and I grilled myself some yummy goodness.

Hello and Good Morning! Been drooling over your recipes for a while and now I'm hoping for some advice. I have 4 cockerels dispatched and skinned 6/22. They were 11week old bantam brahmas & cochins - small like cornish game hens with maybe 1/3 the meat. Cavity is large so thinking of stuffing them and wrapping in bacon, then grilling or baking sort of like quail.
Am I right in thinking stuffing will help keep them moist?
Wow, can't believe this was 3 weeks ago! Just got around to uploading photos. With Zack's helpful advice, I enjoyed 3 dinners and a lunch from my extra boys.
First, I chopped 1 lg onion, 3 ribs celery, and 1 smallish butternut squash into roughly 1/2"cubes drizzled with olive oil and tossed to coat. Oven roasted-I only have a toaster oven currently.-until almost soft.


Meanwhile, I prepared chicken by dry rubbing small amt salt, cumin, garlic, blk pepper & paprika inside and out.
This before dry rub. This pan is 8" across. Once stuffed, I felt they would be too crowded.




So I cooked the first one separately. Let the veggies cool, then stuffed and wrapped in bacon.



There are NO photos of the end product. The bacon shrunk until it looked like a karate belt without the robe. I flipped bird over for last ten minutes.
Used that time to unwrap other 3 and cut bacon strips in half then drape over birds. Better coverage.

Learned: 1) use rack under bird so bottom cooks w/out having to flip. 2) When rosemary bush grows outside front door, REMEMBER to grab some! 3) Buy lots of butternut squash in fall when on sale. Was just starting to fade 8 mos later.

I got a fancy waffle iron for my bday. Dont you do fun stuff with one of those? I imagine you could do some interesting stuff for breakfast with a pininni press as well.
