Pollo alla diavola

Garlic sage rosemary? Pan fried a whole chicken. Nice. Looking forward to butchering a few birds out here at some point. Don't buy chicken from the store so it's always a treat when I cull one.

figured as much with the oil salt and pepper, just couldn't quite make out the last herbs on mobile. We quickly went from several chickens to many here. After the first culling the Misses no longer eats store bought chicken. I'll be processing some ducks this year as well. And Tarragon, olive oil , salt, BP, turn it a few of time , low flame,
My DW don't agree for to much chickens, I began with 2 they became 5 now I have 4+ 14 chicks and pullets so time will tell.

Just happened to be able to put one of these together at work today

Beet, Dutch blue cheese, toasted pine nuts, red onion, rosemary vinegrette.
Wish there was a lighter colored beet in there for contrast but it turned out great.
Here's the pork shank it went with

Garlic mash, braised carrots, and the "sauce" over the top was made from the blended drippings, onion carrot and celery.
