tried to find my potatoe recipe I got it 9originally off the TV back when Graham Kere and Julia Childs were the only shows....

Encyclopedic Cook book
Oyster baked potatoes
6 med potatoes
oil or melted fat
6 tbsp butter
4 4/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
6 tbsp cream or evap milk
6 lg uncooked oysters
1/3 cup French dressing
1/2 cup buttered crumbs

Place oysters in a container and pour french dressing over top.

Brush potatoes with oil and bake. Cut a slice from 1 side, scoop out potato and mash.
Beat mashed potato with butter seasonings and cream. Refill shells making
a hollow in the center of each with the back of a spoon. In Each hollow
place an oyster which has been marinating for 1/2 hour in french dressing.

Cover with buttered crumbs and bake in moderate oven 350 for 20 minuets or
until crumbs are brown..

serves 6

Now that sounds delicious! I'll be making those for midnight snacks, for sure! ;)
 
May I ask if anyone has any good recipes for corn chowder and also something different to make with corn at thanksgiving? like a good corn casserole?

I got recipes for both somewhere, better go take a look....

I don't remember if I have the recipe for the REALLY good corn casserole that one of my acquaintances used to make or not. But worth a check.... (It was so good that everyone took seconds or thirds)

Corn Pudding (i stole this recipe of the web but its pretty much the same)

Ingredients:
5 eggs
1/3 cup butter, melted
1/4 cup white sugar
1/2 cup milk
4 tablespoons cornstarch
1 (15.25 ounce) can whole kernel corn
2 (14.75 ounce) cans cream-style corn


In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
Bake for 1 hour.



Corn Chowder
stolen from the web, sounds like mine but i use more bacon and i also add kielbasa

Ingredient
1/2 cup diced bacon
4 medium potatoes, peeled and chopped
1 medium onion, chopped
2 cups water (or chicken broth)
3 cups cream-style corn
2 teaspoons salt
ground black pepper to taste
2 cups half-and-half


Directions
Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
Mix potatoes and onion into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the water, and stir in corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
Warm the half-and-half in a small saucepan until it bubbles. Remove from heat before it boils, and mix into the chowder just before serving.
