Ask a chef

May I ask if anyone has any good recipes for corn chowder and also something different to make with corn at thanksgiving?  like a good corn casserole?
I'm really glad you asked about soup. I love soups, they can be ridiculously complex in their flavor profiles with just the right amount of work. The payoff for putting that extra little effort into what essentially equates to a side dish is always worth it.
any good soup starts with good mis en place, and for chowder's and other soups that have minimal components to showcase Along with the onion you should have a small amount of celery and carrots to really pull it all together. Bacon is always key in a good chowder too. also a big fan of garlic. And be mindful of your rue, a little goes a long way. On the other hand you can make a bisque instead and thicken it with cornbread for a corny overload

. Try corn fritters or this year for instance I'm making sausage and cornbread stuffing and now I'm thinking some grilled corn needs to be in that too. Corn salsa if your going non traditional. I could probably go on for a little while but will leave you with that food for thought. And hello.

Butchered the other two turkeys yesterday, 25 and 24 pounds respectively, I'll be parting out the bronze so I'll try to remember to get pictures of it. Should have got one of the de legging but that's easy, you just find the gap in the socket and put your blade across it. With the leg firmly in one hand at the foot and knife in the other across the leg, alternate wiggling both hands slighty and it should work it's way through.

Panseared maple leaf duck breast with rosemary rissotto and flash sauted brussel sprouts. Drizzled with pomegranate demiglaze. This last weekend's chefs choice.

happy TDAY

lerned something new.... you can cook stuffing in the crock pot directions are on the box.... but its 1 1/2 hours on high.

I make two boxes up. and usually have to crammm a casserole dish into the oven Next to the Hot turkey....

So we will see.

Oh and no one got up to help me so I plunked the clean dry turkey into a plastic salad bowl... NOw I have handles to tuirn it around and it faces up for stuffing one end... Because I work from a chair handling the turkey has been difficult. I opened the oven door and set the roasting pan on that. Perfect level for the final stuff and I got the tinfoil on it without any issues.... VERY small kitchen by the way. If you open the oven and the dishwasher doors they just miss each other by a quarter inch.

Small turkey only 12 lbs.
