Okay just followed your recipe and now the meat is in the fridge. Had no thyme or sage but had poultry seasoning which has both so used that instead. Hope this turns out great as it sure smelled good.

Do you know what is the name of the common meat breed of sheep you have there?
No, sorry, I'm a city slicker. A sheep is just a sheep to me, except I know merino are the best/good for fleece for wool. I can find out in a couple of weeks, the Royal Show will be on soon.
