Pico de Gallo is basically uncooked fine diced tomato, onion, cilantro and lime. Some put diced hot peppers in it, I do not. That is the "beak" of the rooster, what gives it "bite". I don't like hot peppers at all. For me the cilantro is what gives it flavor though to some people it tastes like soap. I can understand why they don't like it.

I don't know what micros are.

Lobster and grits with pico de gallo and fresh parmesan. Cilantro micros and oil.
That is quite a mix of cultural foods!
