At what age do you process coturnix quail?

I've read different ages-varying from 6 weeks to 12 weeks. How much of a difference does an extra 6 weeks make? My 6 week old quail are really about the same size as my breeders. Is it worth it to wait longer?

And also, should they be laying at 6 weeks too?
