Might be a touch obsessed with these. They make for a versatile, easy, and filling meal.

-Slice an avacado in half, remove the pit, and loosen the halves from the skin.
-Pile your filling of choice in the middle of each half. A popular choice is eggs. My favorite is crab and cream cheese with paprika, cayene pepper, and bonito flakes on top.
-Cook at 425 degrees F for 15-20 min.
 
I get a stuffed avacodo at a local tex mex place frequently. It's shrimp, white fish, mushrooms, onion and bell pepper slices with a cheese sauce. Yummy.
