Open up the neck cavity and cut around the vent, but not too deep. Then use a spoon to free up the insides, it should just fall out but will probably need pulling out a little.

do a couple of them to start with, the young ones can be roasted, but the older ones will need stewing or putting in a pie.

Have a go, if they're good, do the rest.

Our family learned to process on four banty Brahma cockerels...fried them up and they were yummy! The little kids loved the cute little legs; the three men thought the pieces were dainty but they sure enjoyed them.
 
I butched 4 pigeons and 3 OEG young cocks last week. I used my whizbang plucker and had them all done in 45 minutes. Cooked the bantams in the crock pot and made soup out of the pigeons. They were delisious.

The three in the back are the bantams. I got 1/4 lb deboned meat of each pigeon.
