Bento Box Fever!

We really wanted more children, but in hindsight, it appears that God knew what He was doing in doling out the kids for us. Between the amount of attention Bella demands, and the health challenges we've faced, two or three children would have proven extremely stressful. I'd still love to have a couple more just like her, but consider myself very fortunate to have the one little miracle I have.

Hi all, still packing those bentos but my computer is on the fritz so I'm checking in from the library on a day off. Miss you all, hope you are doing well, and really really hope to be back online soon!

I feel for you--no internet makes me slightly insane. Well, more so than usual. Our phone/DSL service went out the other day for a few hours, and I felt like I'd lost a limb.

This probably indicates something of a, um, problem on my part.

Even though we live where we cannot get high speed internet service and I complain about the dial up all the time to dh.............I would be lost without any service! Hope you get back on line very, very soon.

Ok, my pink bento box for my sister with accessories is due in today. I just ordered my dh a box with drink bottle and case and it was only thirty-six dollars with shipping from http://www.lunchboxes.com/bento.html I am so excited and can't wait to get his. I pack his lunch in several different sized plastic containers each morning and he carries it off in a WalMart plastic bag

I love all the pictures you gals are posting as it helps not to get into a rut day after day of packing lunches. Thanks for introducing me to bento boxes I love them.
Ninjapoodles, can you tell me what hummus tastes like? How is it used?

Hummus is really delicious, healthy, and can be infinitely customized. If you want to sample it, you can usually find it in small tubs in your grocery store's deli section. GOOD STUFF. It's most commonly served with pita or naan or other soft flatbreads, or toasted pita chips, etc. You can make sandwiches with it, or quesadillas...all kinds of things.

It's basically chickpeas (garbanzo beans), olive oil, lemon juice...and whatever else you want to blend in there. This is my favorite "from scratch" recipe:

So that I can always have it handy when I want it, but it won't spoil, I keep a container of Fantastic Foods Hummus Mix in the freezer. All you have to do is add water and oil to the dehydrated mix, and it's ready, and it tastes really good.
