Last year an 85 year old friend of mine gave me her mother's jam cake recipe. Her mother made this instead of fruit cake. I love fruit cake so I thought I would give this a try. It is wonderful and I will always make this now instead of my old fruit cake recipe. Hope you all enjoy this.
Bessie's Jam Cake
Mix together:
1/2 cup butter
1 cup sugar
1 cup applesauce
1/2 teaspoon baking soda
2 eggs - beaten
Shift together:
2 cups all purpose flour
2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon allspice
Mix all together and then add and mix well:
1/2 box raisens
1 box mincement
1 cup chopped nuts
1/2 cup cherry preserves
1/2 cup blackberry jam
1/2 cup strawberry preserves
Greese and flour the bottom and sides of an angel food cake pan. Pour mixture in pan and bake at 325 degrees F until done - approximately one hour.
