2) Leave in fridge 2 days
3) Freeze using a FOODSAVR. Go, buy one, it will change your life.
If vacuum sealed, the quality of the meat will not diminish up to a year. If put in a Ziploc bag, it's closer to 2 months. Too much air can get in there. If you only have ziploc bags, double bag them and get as much air our as possible.
