This recipe will make a one person portion of tomato sauce to compliment the creamy delicious eggs.
Tomato Sauce Ingredients
~1 or 2 (depending on portion preference) large tomatoes
~a few pieces of chopped onion to taste
~1.5 tablespoons of olive oil
Tomato Sauce Directions
Slice tomatoes and put slices in quarters. Season to taste. Put a small pan on med-high heat. Add the olive oil. Wait 1 minute and add tomato pieces. Cook for 3 minutes on medium heat.Add onions. Lower heat to Low and put a lid on. Cook for 3 minutes. Turn heat back up to med-high and cook for 3 minutes.
Eggs Ingredients
~2 large fresh eggs
~Splash of heavy whipping cream (milk or half & half also work, but they will not be as rich)
~A few drops of hot sauce
Egg Directions
Mix together the eggs, cream, and hot sauce. **Use more hot sauce if you like spice. If you do not, only use a few drops, it will not be hot whatsoever** Scramble eggs as normal. Add to plate with tomato sauce and season to taste.

Cooking times can be changed. Cook for longer if you want more of a sauce. Shorter will give you more of a warmed tomato.
