I second the video above... this is how I learned to do it efficiently. Before I seen that, I truly felt bad for my customers!! I would hack that bird to pieces...

I think a big thing that is not stated in the video, is that the birds need to be well chilled before cutting them up. They will not pull apart cleanly until they're cold.
