Best way to regrow potatoes?

I've read it's a good idea to cut them into chunks, each with an eye, and then let the chunks sit in a paper bag in a dark place for a day or two. This lets the cut area cure a bit, and hopefully not rot before the new plant can grow. It's the cut part of the potato that is feeding the sprout (hence the term "seed potato") until it forms roots and the shoot gets up to the surface and grows leaves.

I plant my in holes that are about 8 inches deep, with about 3 inches of soil over them. Then when the sprouts come up and the plant gets started, fill in the depression. This gives the roots more area to grow more potatoes. I had my best ever potato harvest last year. :)
