The old rooster almost looks like a Buff Wyandotte, except for the black tail. But whatever he is, being that color, one of the Light Brahmas would have to be the mama.
If the Buff Cochin was the mother, the chick would be buff colored.
But since it's dark with the reddish face, it would be a sexlink from your buff rooster and one of the Brahmas. Therefore, the chick is a female. If it were a male from that cross, it wouldn't have any red on it.
Maybe the Polish carries gold laced under the white and he bred with the Buff Cochin.
