Blasted Beer Butt Chicken

Tip: Buy a cheap $5 roating stand at WalMart to keep bird upright and beer from spilling. They're in the Lawn and Garden section w/the grilling supplies.

The blasting will cause smoke, but the blasting creates a crisp and juicy bird every.single.time!

Preheat Oven to 450 degrees

5.5 - 6 lb whole chicken, skin on: rinsed and patted dry
12 oz can of beer (I use the cheapest beer I can find, but not light beer.)
Sea Salt
Pepper (I use a grinder w/white, black and red peppercorns in it = better flavor)
Poultry seasoning
Butter

Pop the top on the can of beer remove 2-4 oz. (I use this to make beer battered zuccinini or onion rings.) Place the can in the beer stand. Put some butter in the bird, along w/salt, pepper and poutry season. Grease the bird w/butter and season, generously. Place stand in a pan large enough to surround the bird, place the bird on stand, and put the whole thing in oven. Blast for 1 hr to 1 hr and 10 minutes.

Remove from oven. Place aluminum foil tent over bird and allow to rest for 15-20 minutes. Remove from stand and carve....Fabulous.

For Smaller Birds:
3.5 lbs Blast 45 minutes, rest for 10
4-5 lbs Blast for 50-55 minutes, rest for 10
