What will come out of that? Will it be barred? Will it be a head spot for males still?
Just curious as I was going to put my two barred rocks in my blue Plymouth flock and wondered what I got if I hatch one out
 
Solid blue roo with a black barred hen. As long as the Blue is the Blue/Black/Splash gene and not the Lavender gene, about half the offspring will be blue, half will be black. With your Blue over Blue about 1/4 will be Splash, 1/2 will be Blue, and 1/4 will be Black. So you won't know by color which is which.

With that solid roo over a barred hen you will get Black Sex Links. You should be able to see the spot on the males. The Blue ones' spot may be a bit harder to see but you should still be able to see it. The problem is that you won't know if the solid Blue or Black are sex linked pullets or from your Blue on Blue unless you separate the eggs when you incubate.
 
The blue Plymouth’s are sexed via a yellow spot... females don’t have it... does that mean anything?
That means there blue sex link same pretty much what your original question was.
If your Plymouth males have head spots they will be barred (single factor) and the females will be solid blue.
Using one of those barred roosters over your barred rocks will produce solid blue pullets, barred pullets, single barred males and double barred males. So all solid blue will be pullets. You might be able to sex the double barred males by their head spots being larger and less defined edges but probably won't be super accurate for a less experienced breeder.
And yes if you're throwing all eggs together its gonna be all up in the air about what's what.
