Boiled Eggs...what am I doing wrong???

I can't wait for the eggs to get old enough either so after I hard boil them I just chop them up and mix with the mayo/mustard/salt, whatever you want, and serve with crackers. I told everyone it was a "Deviled Egg Dip". Sprinkle paprika on top to make it pretty.

FYI, the older an egg is the more the liquid in it evaporates, causing an air layer between the egg and the shell, making it easier to peel old eggs.
 
I just boil some last night that were 2 days old and i got from a thread here to let the water come to a rolling boil then put eggs in one at a time so the temp of water doesn't come down, and they peeled perfect.

Get the water up to a full rolling boil and gently lower your eggs in. Set a timer for 14 minutes and then shock it with ice water.
As soon as the timer goes off pour off the hot water and cover in ice water-they will peel like a dream.
 
oh yes - boil the water first and then add the eggs. Boil for 14 minutes then drain. Cover with cold water and keep swapping it out until the eggs are cool then peel. You can take eggs right out of the nest and do this and they'll peel easily. Contrary to anything else you've read/heard, no need to add anything except water. Works great.
 
I read in one of the magazines I take "Mary Jane's Farm" to steam them. This is how I do them for my husband to take to work in his lunch.

Put a veggie steamer basket in the top of a pot full of water with water just touching the bottom of the basket. Bring the water to a rolling boil. Place a single layer of eggs in the bottom of the steaming basket. Put a lid on and steam for 20 min. Take out of the basket and place immediately into an ice water bath. When they are cool enough to handle you can rap them with the bottom of a spoon, place the spoon, concave side toward the egg, under the shell and run it around the egg. Shell should come right off.
