breakfast made easy?

Maybe, maybe not depending on the crust. A frittata is basically a crustless quiche so that may be better.

You can cook a quiche any time and just warm it up when you want to eat it.

thanks--I need to fix breakfast for 12 people Sat. and Sun. morning, and want to not make a grand production--so I thought breakfast casseroles-But quiche sounds so much fancier!

quiche is all about the ingredients

since you have so many people you can do a variety with fancy ingredients

Some things we like to use in them besides the obligatory spinach, broccoli, onion, cheddar and bacon are sun dried tomatoes, goat cheese, artichoke hearts, ham, cayenne or Serrano peppers, mushrooms, asparagus, leeks, green onions, potatoes, zucchini etc..
Serve with some fresh fruit and you're good to go.

Don't forget to salt and pepper the eggs before hand.

There are a lot of other good breakfast to go ideas here.

The Breakfast Casserole that is made with the diced bread is supposed to sit in the fridge overnight before baking. That is always my go-to for company oor brunches. You can also skip the bread and make it with the frozen hash-brown potatoes, just make sure to use less milk than the recipe calls for - almost a frittata made that way.
Coffee cake is always good too. I have an overnight Cinnamon Roll recipe that I like too. Just get up and pop it in the oven - I don't even pre-heat the oven as it gives the rolls some time to rise that way.
I like the idea of a couple different kinds of frittata so people can choose what they like or try different ones. I'll have to do that sometime.
