A rabbit does not have to be registered to be shown in ARBA sanctioned shows. It can't even be registered until it is 6 months old, how could there be junior classes (juniors are by definition younger than that)? Shoot, a rabbit doesn't even have to have a pedigree to be shown, it just needs an ear number.
It's a shame that she hasn't sent you the pedigrees yet. I am assuming that you want to register them at an upcoming show, is she aware of that? While I can understand your reluctance to seem to be nagging her, I see no harm in emailing her a carefully worded reminder that you are working with a deadline, and your address "just in case."
It is not unusual to sell a rabbit without the pedigree on hand at the time of the sale. We have all done it, mailing the pedigree within a week is a courtesy we all expect. The rabbit gossip mill works overtime, she's going to get a reputation that she'll find hard to shake if she does this too often.
If she doesn't send you the pedigrees, it isn't the end of the world. Pedigrees don't guarantee quality, and most pet buyers couldn't care less. Some breeders charge more to print up the pedigree than if they are selling the rabbit without it; I don't hold with that practice myself. You might find a few people that will be willing to pay more for rabbits that are registered/registerable, but people won't be beating your door down to get them. In the long run, it probably won't make much difference, money-wise.
A rabbit without a pedigree can't be registered, and without registration, it cannot become a Grand Champion. I have owned several rabbits that earned the necessary "legs" but could never be granded, because their pedigrees weren't complete. For me, the biggest cost of those unrecorded ancestors was in the form of "braggin' rights!"
