Look up breeders clubs, for example "English Orpington breeders club" look for a group that had the standards listed and a directory to breeders, most pay to be added to the directory.
 
If you truly follow the SOP the production quality follows. Breeds where puffy feathers are pushed usually fall off the production. Feathers can hide the body structure underlying.

The only trick to finding good breeders is to see their birds. You can tell instantly if they are perpetuating hatchery stock or if they had breeder stock and have made bad choices and puppy mill them out.

What's left are serious breeders.
 
It can vary widely by breed how many breeders care about productivity. I would suggest making a list of breeds you are interested in and reaching out to breeders about their stock. Ask questions about size, growth rate, and egg laying. Any large fowl breeder is likely to be tracking these traits already. See if they match up to your needs.
