Breeding kosher kings

I'm commercial enough that I don't work off the farm, but small enough that most wouldn't view me as a commercial farmer. I bought the Sasso's from a local chick broker who has access to the large commercial hatcheries in the Fraser Valley. It's my understanding that the Sasso x431b produced in the Fraser Valley are not consistent with those produced in other regions of North America. From what I've observed, I highly suspect that they are replenishing their grandparent stock from the offspring of their grandparent stock rather than go back to Sasso for more.
 
Welsummer would be your best bet being a heavy breed. But there are much better choices, so if you're willing to get another breed, then go ahead. I reccomend Cornish or Dorkings, being some of the biggest heavy breeds.
I have kosher kings first year I’ve done them, I’ve been doing Cornish cross a couple years. I was thinking of keeping a few for breeding. My rooster choices would be white jersey giants, brown leghorn or gold laced Wyandotte. The white Jersey is the largest wasn’t sure if it would be recommended
 
A kosher king is a cross between a barred rock and a speckled Sussex. I am not sure what breed is better as a rooster or hen though.
 
I know KK are a cross between barred rocks and speckled Sussex. I just don’t know what breed is better for the rooster or hen.
