So, I completely understand that I cannot breed my red sexlink hens with my red sexlink rooster and get red sexlink chicks.
My question is: What are the chicks considered?

I have red sexlinks that I keep for laying purposes, but I do incubate some eggs for meat purposes and would just like to know what they would be considered? Mutts?

If I want to breed for more layers, I should just start with a Rhode Island Red Rooster and either a White Plymouth Rock or Rhode Island White hen, yes?

Yep, they would just be mutts :) Actually, there are lots of ways to make a red sex link, and you can see this thread for a good table that shows some of the possibilities: https://www.backyardchickens.com/t/261208/sex-linked-information

There are other birds that work too, though. For example, my buff orp rooster over my light brahma hen produced red sex links.

Thank you for the information. So much to learn, but I'm very excited.

They are really decent and even though they are "mutts", they lay great big nice brown eggs too. They maintain the same characteristics as the true sexlinks. Color, size, personality, etc.

If you saw the 7 mth old hens I have (off the true red sexlinks), you would think they were sexlinks too.
