Bresse Chickens

I plan on replacing all breeders with a back up rooster as well. 3 hatched last night..8 more this weekend and couple of dozen in the next few weeks..ill keep hatching as many as they lay..
 
how long does it take Bresse to grow to eating size?
Traditionally, cockerels are processed at 16 weeks and pullets are processed at 20 weeks.

You can go longer with both but the growth curve starts going down shortly after those dates--less growth with more feed--not a good trade off.

And of course the meat starts getting tough.
 
I see a lot of info on-line about feeding Bresse chickens milk? How do you do this? Is it Kefir or Kefir grains? I know you want to keep them on low protein so I guess corn only would work? Please help I want to do right.
