Have a couple of spent hens that need to be turned into soup. We tried this last year with a few old girls, and our broth did not turn out. I'm not sure what we did wrong. Hens went into a crockpot with a few cups of water and some salt until the carcass was almost bare. Then we filtered through a small strainer and made soup. Meet we feed to the dogs.

Looking for some help or a good broth/soup recipe, I'd really hate to see them go to waste again.
 
If you want to make good chicken stock (which I'm assuming that's what you're referring to):

2 whole onions, quartered
4 large carrots, cut into 2-3" pieces
6 stalks celery (especially the leaves), cut into 2-3" pieces
Salt and Pepper
1/2 head garlic (optional)

1 chicken cut into pieces

Cover with water and let cook on low for 6 hours. Strain the whole thing, reserving the chicken meat if desired.
