I live in saskatchewan, and we have butchered animals in the dead cold winter/fall. We butchered are meat chickens in early novermber it was cold but not bad however i have hunted rabbits in minus 15 C weather. Also have filleted fish in minus 20 weather. Its not bad for one or two fish/animals how ever if you have a lot then maybe you want to wait to a warm day just my thoughts.
