I've decided I am too tired to sugar off tonight. But the sap I've boiled down will have a high sugar content so it should be fine to wait another day I think.

Will it stay that reddish color (or maybe that's just the way it looks...or maybe I'm tired too)?
 
Now I am hankering for some pancakes & maple syrup.... We've got quite a wind going tonight too - house is so drafty, I put on a coat to work on the computer.

So what happens if it is not fine? Fermentation? Mold? What is with the sap that you need to process immediately? Sounds like roadkill in TX has a longer shelf life!

No idea what the temp is outside but the wind is still howling. Yesterday my oldest DS drove from NE Kansas to SE Wyoming and said he was fighting wind the entire trip, sure made for a long day for him.

@whoop whoop the pulled pork was great. So was the maple-rum pound cake I made as desert

Morning Scott. We have rain predicted off and on all week.

Guess it's good all my chores this week are inside. In the middle of a partial kitchen remodel.
