Aw thanks for the healing wishes everyone :) Like @Mtn Margie , the cold is sapping the energy I'd like to have to tackle the outdoor jobs! But as it was, not too bad at all, missed getting out to the woods to collect sap but we boiled what we had and I'm trying to get the last of it down on the stove. Should be about 1.5 liters.
Quiet tired though, so I hope it finishes soon 'cause I need to be off to bed.
Another week is upon us, I hope it starts off well for everyone (despite the time change!)
You're getting lots of syrup!

Today was the day that the cheddar cheese is ready. It is very good and actually tastes like cheddar.

The next one will be better. I will work on the curds to get a smoother texture.

I am happy with it though and it was a great first effort
