When I make butter, i rinse it with water and then squeeze it out through cheese cloth. The commercial process must have a similar method that leaves more or less of the water in the butterI guess if there was no water, it would be a rock or dry brick. Looking at my butter (Tillamook in my house) the ingredients are cream and salt for salted butter and cream for unsalted butter. I use both for different reasons. So I'm curious as to the process that leaves one butter with more or less water, and does it matter? There's a difference between milk and cream, but they are both good for you, IMHO.
