I guess if there was no water, it would be a rock or dry brick. Looking at my butter (Tillamook in my house) the ingredients are cream and salt for salted butter and cream for unsalted butter. I use both for different reasons. So I'm curious as to the process that leaves one butter with more or less water, and does it matter? There's a difference between milk and cream, but they are both good for you, IMHO.
You have friends here. :hugs Sometimes we like to share what we have learned, but we aren't passing judgement on anyone. In the end, we each have to make the decision that best for our own family and lives, Sometimes what we share is wrong, but we are sharing what we know based on our experiences. And we come out on the other side BYC friends! Because we really like each other, and you! We like you!
When I make butter, i rinse it with water and then squeeze it out through cheese cloth. The commercial process must have a similar method that leaves more or less of the water in the butter

I understand that. Hubby always looks at things differently and has his own way of doing things. It can be challenging but we work it out. We met in 1974.
