SE ~ I'm here!! Let's just say that my in-laws have managed to ruin another Thanksgiving for us!
I have never met such stubborn people in all my life!! It's like
DH was diagnosed with pneumonia on Monday. His father has had pneumonia and bronchitis off and on for about 6 weeks now, and his mom has had them for about 4 weeks now. They both went back to the DR yesterday and was AGAIN diagnosed with pnemonia. They have been insisting that we come to t-day dinner even though DH is sick! They are also having it at my DBIL and DSIL's house this year and their 2 girls are highly suceptable (sp?) to pneumonia and usually end up with it every year! DH's 2 sisters and his parents all said that no matter what they are going over their for T-day dinner!!!
Let's just say that I have been
for the last several days with DH and with his family.
DH kept trying to cave and say we were going, but I told him NO!!!
So, we finally sat down and discussed what we're going to do from here on out. Next year, we will be having T-day dinner here, and (if they choose not to come over here), we will meet them that evening for dessert and some family time, but not until we have had our dinner here - even if it is just us. And if he thinks that he can change his mind next year, he's got another thing coming!!
Anyway, I have managed to pull together a pretty good last minute dinner for us. I've got a lot of my dishes prepped and ready to go in the oven in the morning. My turkey is in my roaster as I type and will cook low and slow all night long. It will be so tender by morning that it will be falling off the bones and I will have trouble getting it all out!
My chocolate pie and pumpkin pie are baked and in the fridge. Really, the only things I will have to worry about tomorrow will be cooking potatoes for mashed potatoes, green beans, make rolls, and finish the deviled eggs. I'll be putting my dressing, broccoli casserole, & sweet potato casserole in the oven.
OK ladies, it's been a long and emotionally exhausting day. I'm off to bed. Have a great night ladies. I promise to try and check in more often!
