What Are Your Favorite Cuts of Beef?

I eat lots of steak... Mostly aberdeen angus sirloin. I have tried veal before (yum) and sometimes have rump (round) for roast dinner!
But my favourite is still ribs, especially covered in BBQ sauce and when they slip off the bone when you eat them!
 
And also I wanna know who picks toungue
I've heard tongue is really tender, I've also heard horse neck is pretty good but people get alarmed if you mention that.
And brain... really, is that a thing? And what in the world are beef cheeks?
Well.. it's not the back end of the steer...

Tongue is used in a lot of cultural dishes (beef and ox, as well as goat, camel and some others depending on the region). Same with brains (a LOT in french and euro cuisine where it's considered to be a delicacy) and cheeks. You see all 3 commonly in Mexican cooking (and other Central and South American cooking). It's one of those "when in Rome" kind of situations. I would not seek any of these out (except maybe Lengua tacos in Mexico City), but I tried all of them without knowing what was in them and found them to be tasty.

All 3 are usually served slow cooked, as they're very tough or chewy.
