Camping food ideas anyone?!?!

We usually grill something the first night like chicken that we bring marinating in a bag in the cooler. We do that first so the meat doesnt stay in the cooler long. We also bring a salad or something that is more perishable and eat it the first night too.

Then we usually do a burrito night. You can have lots of different fillings depending on what people like. We usually just do bean cuz it's easy but you could bring ground beef already cooked in the cooler. Then bring cheese, onions, tomatoes , boil in the bag rice is quick and easy to add too. People can grab some tortillas and make their own burrito with whatever they like to put in it.

We usually do spaghetti or some kind of pasta one night too, quick , easy and filling.

Sloppy Joes , grilled cheese, baked potatoes in the fire, are some others we've done. If we go with a few different families we make each family responsible for a dinner, then you only worry about one night


Also you can get dry ice to help things stay frozen or cold longer.

You can fix anything in a dutch oven that you would fix in your oven at home. (And I do mean anything, I've got a chocolate cheesecake that I do!) Just let your imagination run wild. If you are looking for fast and easy let me know and I'll give you some more ideas but this for starters:

Cheater Cinnamon Rolls

1/4" cream in the bottom of your dutch oven
1/4 to 1/2 C. brown sugar-depend on your sweet tooth
1 T. cinnamon-I like a lot, so a good dusting
1/2 C. chopped pecans-optional
1 can-bam biscuits

Stir the sugar and cinnamon into the cream, add nuts, dredge biscuit and flip. Cook for about 45 mins @ 350-Check you briquet temp chart. Carmel gooey goodness! Have fun camping.
 
We also do breakfast burrito's, scramble eggs, use last nights left over baked taters, onion, jalapeno's, sausage what

ever you like. I tear up corn tortia's and thro them end at the end just to warm them up . Put hot sauce on top. I tried

warming the tortia's up in foil but this works better and all in one pan.


I also love it when you catch fish and grill or fry it right up. YUM is it time to eat yet???

ke_ben we call those whop biscuits. Cinnamon roll sounds yummy, gonna try that next time I go.
 
How many eggs do you have? there was a thread about what to do with the extra eggs that listed some really REALLY yummy meals.
 
We do alot of backpacking and its hard to do great meals when you have to carry them on your back for 6 or 8 hours, but I have a new FAVORITE that is SO easy and So yummy.... Just 1)get a bag of dried refried beans; 2)pre-cut up an onion and toss in a zip lock bag with 3)those little cut up canned new potatoes + 4)seasonings like salt pepper garlic chili powder, whatever... And get 5)a bag of beef jerky - the tender steak kind... Then out at the campsite you just toss all of it together in your dutch oven, no cutting, no mess, just add water.... Then serve on 6)Flour Tortillas(you could sprinkle some grated cheese on top too); (and a nice cold Beer)!! YUM>>> very filling, very yum, very easy!

We cook in our dutch oven all the time. We make dutch oven lasagna, no cooking the noodles. Pour in 1/4 cup hot water to start. Then, just layer in some italian sausage chunks or ground beef (cooked or uncooked, it's all good), chopped onion, lasagna noodles, jar sauce, ricotta with a beaten egg, and mozzarella (parmesan, too, if you like). Don't end with a noodle layer. Top with 1 cup hot water. Cook for an hour.

Another one we like is blackened chicken, where you layer whatever veggies you like, carrots, potatoes, onions, etc. on the bottom so there is only enough space for chicken on top, add chicken (skin on) so the skin touches the lid when closed. Before closing, wet it all down with some italian salad dressing, and then cook for an hour, the usual coals on top and bottom, rotating every 15 minutes in counter directions. This gives you a nice crispy skin on the chicken, and divine veggies.

One chicken and sausage casserole that I like involves tossing in chunks of carrots, celery, potatoes, then adding an undiluted can of cheddar cheese soup, cream of mushroom soup, uncooked bulk sausage, uncooked chunks of chicken. (I know it sounds weird, but it's delish!) Add pepper to taste. Don't add salt. The soups have plenty! Cook as usual for an hour.

When in a pinch, there is always stone stew. No stone, really. Just one of whatever veggie you can find, hot links chunks or chicken (even canned chicken) and a quart of Trader Joe's soup. We like the black bean soup. You ony need to cook it until the potatoes are soft, so about 30 minutes. We end up with a nice spicy stew. Some rolls, and dinner is served.

Dessert or breakfast, you have to do monkey bread. Try not to eat too many. Lots of sugar!

2 cans Grands biscuits
1 cup sugar
1/4 cup cinnamon
Cut each biscuit into 4's, shake in a ziploc bag with cinnamon/sugar mix. (Save extra mixture for another time, or for cinnamon toast.)
Put these dough balls in the dutch oven that has either been buttered, or sprayed with Pam, or just line with foil

Next:
1 stick butter
1/2 cup chopped nuts (walnuts or pecans are great!)
1 cup brown sugar
On the camp stove, melt butter in a small pan, mix in brown sugar. Bring to a boil and cook for 2 minutes. Mix in nuts. Pour over biscuits, move them around a bit so the mixture gets down inside. Add coals, but not too hot, for 30 minutes. Rotate! Serves a crowd.

Dutch ovens are the best! Have fun on your trip!

ETA -- I did not give the usual dutch oven instructions, but I am guessing you know to cover, put coals on top and bottom evenly (a certain number of coals gives a certain temp) and rotate the dutch oven one direction and the lid the other direction every 15 minutes to avoid hot spots.

sorry if Im repeating as I skipped ahead. We always did baked potatoes one night. just coat them in a little oil, wrap in foil and throw in the fire around the edges. Foil babies, in a square of foil lay down, sliced potatoes, sliced carrots, onion salt, pepper and top with a hamburger patty. Wrap foil up and place over foil, if I remember it takes like 30 minutes. One really good dessert is to take a banana, skin on, remove one strip of the peel and scoop out some of the banana to make like a canoe. Fill with peanut butter and chocolate chips and marshmallows. place the peel back on and wrap in foil and place next to fire where its just warm. Maybe 10 minutes till toppings are melted, top with whip cream and cherries and peanuts.
 
I am a low carber, so when I go camping, I can't just eat junk food like all my friends do

I bring bacon (or sausage) and eggs for breakfast, lettuce wrap stuff (sliced turkey breast, 'maters, cream cheese spread, etc...) for lunches, and ribs, chicken or other good grilling food for diner. Plus I always bring plenty of cheese, nuts, jerky, fresh fruit and veggies for snacking. Oh...and the booze. Can't forget the booze

You beat me to it! We would butter the bread and then fill them with a bit of pizza sauce, pepperoni, cheese, onion and green pepper then cook over the fire for pizza pockets. So good!

The pies are yummy too! Did you sprinkle the buttered bread with sugar for the pies?

You can't find the same type of cast iron "irons" like 30 years ago. They are much lighter weight now.

On my pies .. No sugar... I'm diabetic, but the kids ... LOTS!

And we tent it .... just a propane stove and a fire, to cook on.
 
Well you have the dutch oven... beef stew... chicken stre, chili - any of that can be made ahead and will keepp in an ice chest with ice thingys.....
