can chickens eat hay

I have read from reputable sources that alfalfa hay (left in the whole bale and placed in the coop) is good to use as a protein supplement in the winter, as well as to give them something to pull and nibble on when there is nothing else natural available or when the weather is too bad to let them free range. I think we will start doing this next winter. I did not see Timothy hay mentioned. I don't think it has enough protein content to be a really good supplement. On the other hand, in small amounts, I can't imagine that it's harmful, either. You just always want to be sure any hay is fresh smelling without any mold.
