From what I've read Leghorns are fairly good egg layers, averaging over 250 a year. It depends individually on the chicken, but most are on some type of cycle. They may lay 7-10 eggs, then might skip a day or two. I once heard of a chicken that laid an egg every day for 30 days. The fewer the chickens, the more likely you'll notice which ones are laying and which ones aren't. I have 12 hens, and right now I'm averaging about 6 a day. But most of mine are yound and aren't up to full production. In fact, I think a couple haven't started yet because of their age. Egg production decreases based on a couple things. One reason would be the length of daylight hours which are cut nearly in half during winter. Commercially, layers are stimulated artificially with lighting. Which I don't perscribe to. Another reason is when they molt, which is when old feathers are replaced with new ones. This process can takes months and uses up energy so egg production is usually stopped. The reason I got some Red Star or Red Sexl-link this year is because I've heard they lay all winter and have a larger egg for their size and their food consumption.
