Can I let pie crust dough rest overnight instead of 30 minutes?

Hi,

I'm making homemade vanilla ice cream and an apple pie to go with it for my neighbor's birthday tomorrow. I'm trying to get as much done today as possible so I can bake the pie early in the day.

I was wondering if I could make the pie crust dough tonight and let it rest overnight instead of the "at least 30 minutes" that the recipe calls for? Thanks!

Thanks for your answer! Actually, I was just going to make the dough tonight and divide it into two flattened rounds and refrigerate it and roll it out tomorrow. Do you think that would be okay? Thanks!

that is absolutely fine. It will actually benefit from that rest and be a bit more tender... many recipes recommend a longer rest period in the refrigerator. It will sit for a couple days if you want. No need to roll it until baking time.
