Canning and Home preserving

Deb,

So sorry to hear about your accident with the water tank. That does not sound fun at all. Glad the neighbors came to help. Hope you are feeling better soon. Take it easy so you can heal.

It sounds like your plans are coming along nicely. Good luck with the wire racks! That sounds like a good system for you.

For any T-shorts that you can't wear anymore, they make a really nice quilt when backed by a nice cotton fabric. A friend of mine had all her son's high school swimming t-shirts made into a quilt that he took to college.
I have a sewing machine some where in my Laundry room. And I will have a ton of jeans as well. I could make all sorts of things. Some of those t shirts are enough to make four place mats.

My walls are white and they will stay that way so any color I want to bring in in the form of Wall hangings art or glass.

I have one window devoted to cobalt blue... I am bringing in Red Cabinets eventually.

I want to do a painting for one wall on an oversized canvass. Painting combo collage of sorts.
Like I said being somewhat creative I get myself into alot of trouble being around "Normal" people.

Pain only hurts when you focus on it. for the most part. I have been in pain for about forty years now. I am doing ok.

I actually am thinking about getting a Total Gym and try to build up not only my core strenght (to keep me from falling down at the drop of a hat) as well as my leg strength.

But that doesnt happen unless I do it. Shrug

Take it easy glad you can hire some help you will need it
Help of the male persuasion is hard to find. Lot of alchaolics and drug addicts. there may be a few though. I know there are a cuple of people who hire out bobcat work... The driveway is about eight hundred feet long I estimate. And it needs propper grading... Taking out the ruts and provide direction for the water runoff.

Yes it does rain in the Desert Usually Dumping a gully washer out of monsoon clouds heading for Arizona. Rain comes down hard and fast drops as big as your fist.. Washes anything loose away....

So the driveway will need grading by someone well versed in the area.

Yep I do have a checklist all arranged by priority... First at the top is getting the wiring attended to inside. House isnt grounded properly and I need a new breaker box ... thats going to take a chunk of change for sure.

I haven't read the entire threat, so forgive me if this was covered.

I am new to canning and I have been making some great jams, jellies and marmalades.

The last one I made, Sweet Red Pepper Jelly, was going great until the water bath. It set in the pan it was cooked in and on the ladle I used to ladle it into jars. When the jars came out of the water bath, the jelly was very runny and after 24 hours, still hasn't set.

What did I do wrong and/or how do I fix it?

I did the rosemary jelly and it was fantastic. I also did garlic jelly and chardonnay jelly as well as a few of the common jellies. Out of maybe a dozen, only one other didn't set up well after the water bath, but that one can be used as a syrup. (Raspberry jalapeno jelly syrup.) I figured it was the recipe but this one has tiny flakes of the red pepper that is supposed to be suspended in the jelled result. Please advise, as I need to avoid making the same mistakes in today's batches.

Welcome to the thread. From what I have read it takes a bit more acid for certain jellies. You might read what the manufacturer of the pectin you used recommends. I will look it up as well.

I am the originator of this thread. I am a rank newbie to the whole thing. I have made so far is Turkey broth, apple butter, Cranberry Clementine sauce, And Ghee.

I would love to make Marmalade Both Orange and Kumquat. But I have to be careful because My Type 2 Diabetes is in remission I have to consider myself a diabetic still.

You may still be able to resurrect your jam fail I will look in to that as well.

@slippednfell

This is a commercial jelly maker "Grey Goose Gourmet" She uses Jalapenos but I am certain that you can use what ever pepper you want.

She uses the types of jars for commercial sales. They get inverted for the seal. But you can use regular mason jars. She also explains the science of making Jellies.

I hope you find this useful.
